Are you all surviving winter? Actually, we’ve been fortunate and have had a pretty mild winter so far and Punxsutawney Phil didn’t see his shadow the other day, so I guess we only have 6 more weeks until Spring, right?! Well, here’s a delicious recipe for Taco Soup to help you get through the days until Spring arrives!
We have been busy in the evenings with sports and I can only eat so much fast food, so it’s nice to toss something in the crockpot between work and going out the door to a basketball game or practice and enjoy a home cooked meal!
Whenever I ask the girls, “What sounds good for supper?” Our oldest always says, “Tacos!” Now, I do love tacos, but she could eat them every.single.day. I’m not that dedicated to them…now pizza, yeah I could eat that every day! Anyway, Mel and Jo don’t share the same love for tacos that B does. They will eat them, but they aren’t on the top of their list, however they LOVE this taco soup. Plus, it satisfies our B’s palette as well.
This recipe is for stovetop, but it can easily be made on the stove and tossed in a crockpot to stay warm until ready to eat, or just brown the hamburger then toss in all the other ingredients and cook on low for 3-4 hours.
Taco Soup
To make this taco soup need:
1 pound ground beef
15.25 ounce can of sweet corn, drained
2 Cups salsa
2 4.5 oz cans green chilis
15 oz. can black beans, rinsed and drained
2 Tablespoons homemade taco seasoning or 1 1oz. packet taco seasoning
2 Tablespoons dry ranch mix
14.5 oz can of beef broth + one can of water
Toppings of choice i.e. sour cream, guacamole, tomatoes, lettuce, and shredded cheese.
Brown the hamburger, then drain. Return the hamburger to the pan, then stir in the corn, salsa, chilis, beans, taco seasoning, and ranch seasoning. Then stir in the beef broth and can of water. Simmer for about 30-40 minutes.
*Crockpot version~ Brown hamburger, then drain. Put hamburger in crockpot. Stir in corn, salsa, chilis, beans, taco seasoning, and ranch seasoning. Then stir in beef broth and can of water. Cook on low for about 3-4 hours or until heated through.
