Cheesy Cabbage Casserole

Most people have a love, hate relationship with cabbage. This recipe for Cheesy Cabbage Casserole will turn your hate into love!!!

Ingredients

  • 4 C. chopped cabbage
  • 4 Tablespoons butter + 2 Tablespoons for topping
  • 3 Tablespoons flour
  • 1 Cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 1/2 Cups grated Velveeta Cheese
  • 1 1/2 Cups cracker crumbs divided (I prefer Town House only because that's usually what I have on hand because that's usually our cracker of choice, but any will do)

Instructions

  • Cook cabbage in water over low heat and drain.
  • Melt butter in sauce pan over low heat, add flour and whisk together until blended.
  • Add milk, salt, and pepper, stirring together to make a thin white sauce.
  • Once combined and heated for a few minutes over low heat, stir the sauce into the drained cabbage.
  • Stir in the cheese and 1/2 the cracker crumbs.
  • Place in a greased 2 quart baking dish and dot with cubed 2 Tablespoons of butter.
  • Cover with remaining cracker crumbs.
  • Bake uncovered at 400 degrees for 25-30 minutes or until cheese is melted.
