Buckeyes

Buckeyes.  They're a Christmas favorite and one of the most popular holiday foods to make and share with friends and family.  They are so easy to make and so yummy.  You will have a hard time giving them away because they are so good!

Ingredients

  • 2 cups creamy peanut butter
  • 1/2 cup butter softened
  • 2 Tablespoons brown sugar packed
  • 1 1/4 teaspoons vanilla
  • 3 1/4 cups powdered sugar
  • 12 ounces semi-sweet chocolate chips

Instructions

  • Combine peanut butter and butter and beat until well combined.
  • Add brown sugar and vanilla and mix well.
  • Gradually add powdered sugar until completely combined. Form into Tablespoon sized balls and roll in the palm of your hand until smooth and round.
  • Place on wax-paper lined cookie sheet and freeze for 20-25 minutes.
  • While peanut butter balls are in the freezer, prepare the chocolate. I brink a small amount of water to a boil in a saucepan, then place a stove-top proof bowl on top and add the chocolate. Reduce the heat and stir until melted.
  • Remove the peanut butter balls from the freezer. Using a toothpick, pick up each ball and dip into the chocolate.
  • Return to wax-paper and allow to cool and the chocolate to set.
