Buckeyes. They're a Christmas favorite and one of the most popular holiday foods to make and share with friends and family. They are so easy to make and so yummy. You will have a hard time giving them away because they are so good!
- 2 cups creamy peanut butter
- 1/2 cup butter softened
- 2 Tablespoons brown sugar packed
- 1 1/4 teaspoons vanilla
- 3 1/4 cups powdered sugar
- 12 ounces semi-sweet chocolate chips
Combine peanut butter and butter and beat until well combined.
Add brown sugar and vanilla and mix well.
Gradually add powdered sugar until completely combined. Form into Tablespoon sized balls and roll in the palm of your hand until smooth and round.
Place on wax-paper lined cookie sheet and freeze for 20-25 minutes.
While peanut butter balls are in the freezer, prepare the chocolate. I brink a small amount of water to a boil in a saucepan, then place a stove-top proof bowl on top and add the chocolate. Reduce the heat and stir until melted.
Remove the peanut butter balls from the freezer. Using a toothpick, pick up each ball and dip into the chocolate.
Return to wax-paper and allow to cool and the chocolate to set.
