Hobo Casserole with Smoked Sausage

Ingredients

  • 2 14 ounce packages Eckrich Skinless Smoked Sausage links sliced or chopped based on preference
  • 1 lb baby carrots you can also use whole, chopped carrots but I like the convenience of the baby carrots when we are camping
  • 1 head cabbage chopped
  • 5-6 medium potatoes cubed
  • Salt and pepper to taste
  • 1 stick of butter sliced

Instructions

  • Grease a 9x13 pan with cooking spray (If you're cooking over a fire, use an aluminum pan) and add a bit of water to the bottom. Maybe 1/4" in the bottom just to help minimize any sticking.
  • Toss all the ingredients in the pan. Sprinkle with salt and pepper. More can be added later also to taste.
  • Add the sliced butter and give it a good stir. Cover with aluminum foil. If you're cooking it over a fire, cook for about 45 minutes over medium heat , checking and stirring often, until potatoes and carrots are fork tender. If you're cooking it in an oven, cook at 400 degrees for about one hour, or until potatoes and carrots are fork tender.
  • Note: You cannot mess up the measurements in this recipe.  Not a fan of cabbage?  It's ok, just leave it out!  Prefer more carrots over potatoes and vice versa, just go with it.  Do you like celery?  Toss it in and see what happens!
