Banana Bars with Cream Cheese Icing

Are you looking for a new way to use up some of those overripe bananas?  Or, maybe you just like bananas and are looking for new recipes to try.  Either way, you will love this recipe for Banana Bars with Cream Cheese Icing!
What You Will Need
  • 1½ Cup sugar
  • 1½ Cup butter, softened
  • 2 eggs
  • 1 Cup sour cream
  • 3 large ripe bananas, mashed
  • 2 teaspoons vanilla
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 Cups flour
Frosting
  • ½ Cup butter, softened
  • 1 lb. (4 cups)powdered sugar
  • 8 ounce cream cheese softened
  • 2 teaspoons vanilla
  • Add 2 Tablespoons cocoa powder for chocolate cream cheese icing
What You Do
  1. Cream together sugar and butter. Add eggs and sour cream and mix well. Add mashed bananas and vanilla and mix until well combined.
  2. Add salt, baking soda, and flour. Mix well.
  3. Pour into greased jelly roll pan (15x10).
  4. Bake at 350 degrees for 20-25 minutes. Cool completely.
Frosting
  1. Mix together the butter, powdered sugar, cream cheese, vanilla, and cocoa ( if using).
  2. Spread evenly over cooled bars.
